Sweet Bacon Wrapped Shrimp and Quinoa Casserole for two

                                         This was our dinner tonight. Easy and delirious.  .


Quinoa Casserole

1 cup quinoa
2 cups water plus 2 cups water
1/2 a medium onion chopped
1/2 can corn with peppers
1 small head fresh broccoli

In a sauce pan heat to boiling 2 cups water, 1 teaspoon oil and the crown of the broccoli cut into florets. Turn off, cover and set aside. wait 10 minutes and drain. Cut into small florets and set aside in a medium bowl.  This keeps them bright green.

Drain the corn and put half into the bowl as well. Save the rest for another day.

In a saucepan put 2 cups water, the onion and the quinoa. Bring to a boil and simmer until the water is gone.  add to bowl. Mic if needed to serve hot.




Easy Sweet Bacon Wrapped Shrimp

20 shrimp Large ones
10 pieces of bacon cut in half
3/4 cup dark brown sugar
2 teaspoons instant Coffee
1 teaspoon Chilli powder

Mix the brown sugar, instant coffee and chilli powder together and set aside.

If shrimp is still frozen simple put in a bowl of cold water for 15 minutes. Drain.

Wrap 1/2 piece bacon around each piece of shrimp and dredge through the brown sugar mix. set on foil on a cookie sheet. cook at 375 degrees in the oven for 20-25 minutes until the bacon starts to crisp up. Serve hot.
